Bacon and Egg Quiche!

Hi Housewives!

Today’s recipe is for an easy and yummy egg quiche.  I made this yesterday for a Ladies Tea Party that I hosted and it was a hit!  This dish is so simple and uses staple ingredients so its perfect for that spur of the moment breakfast.  Serve it for brunch, lunch or even dinner!  Best of all its easy, simple and quick!  Your guests won’t be disappointed with this.

  • 7 strips of cooked turkey bacon
  • 1 1/2 cups of shredded cheddar cheese
  • 1/2 cups of Bisquick
  • 1 1/2 cups of milk
  • 3 Tablespoons of melted butter
  • 3 eggs

Cook your bacon and then let cool.  Then crumble the bacon into buttered or greased pyrex or pie tin.  Add the shredded cheddar on top of this.  Add the eggs, Bisquick, milk, and butter to a mixing bowl and blend with a hand blender for a minute or two (you can use a regular blender or even a mixer for this).  Pour over the bacon and cheese.  Bake at 325 degrees for 45 minutes or until golden on top.  Let cool for a few minutes before cutting.  Enjoy!

Chia Seed Pudding

This week’s recipe is for Chia Seed Pudding!  I know, I know I’m a little late on joining the bandwagon on this super food but hey, better late than never.  Chia seed is said to be a metabolism booster!  Who doesn’t love that?  I have actually tried chia seeds before but not in this way.  I’ve added some chia seeds to my smoothies but wasn’t impressed with the added crunch.  I’ve heard you can put them in salads, again, that wasn’t exciting me.  Then I stumbled across some recipes for chia seed pudding.  Now that peaked my interest.  So this week I decided to tamper with that and give it a go.  To my surprise, I REALLY enjoyed it.  It’s a great breakfast especially on mornings when you are on the go because the easy prep is done the night before, leaving only for you to add some fresh fruit if desired and go!

  • 1/4 cup chia seeds
  • 1 cup of coconut milk
  • 1 tablespoon of vanilla extract or honey or maple syrup
  • fresh fruit for topping

Put the chia seeds, coconut milk and vanilla in a container.  Mix all together and refrigerate overnight.  That is is!  The next morning before you are about to indulge, mix it up, chop some fruit – I like blueberries, raspberries and banana and top it.  Grab a spoon and eat!  If you need a little more added sweetness just add some more honey or syrup.  This is filled with omega -3s and fiber so its a perfect way to start your day.  Like I said I was skeptical at first but it really is a nice treat.  It is sort of like tapioca pudding but much more beneficial for you.

Boardwalk Steak!

Hi Housewives!

Did you have Steak-Umms as a kid?  I did…maybe not the best thing for you but who knew back then…

How about the steak sandwiches from the Jersey Shore? Ummm….Delish!

Or better yet, if you’ve been to Philly, one of their amazingly famous Steak Sandwiches?  Yea!  It doesn’t get better than that….

Well, I’m here to tell you that you no longer need to trek miles for those sandwiches…you can now make them in the comforts of your own home.  And the best part is you can make them as healthy or as unhealthy as you like! Who knows what is put into those Boardwalk sandwiches and how much fat you are consuming unnecessarily….LOL!  When you make your own you are in control and know exactly what you put into your meal and you don’t sacrifice taste.  When I ate this it was just as good and maybe even better, definitely less greasy! :)

Another plus is that this is Super Quick to cook!  No need to slave over the oven….it’s perfect for when you are busy and need a fast meal.

One day, in the supermarket I stumbled across this shredded steak in the meat section.  It was very thinly sliced steak.  I was skeptical at first but it looked good so I decided to give it a whirl.  Memories of Seaside Boardwalk steak sandwiches danced in my head at that moment so I bought an onion, two peppers and some cheese and decided to try to make my own steak sandwich.

  • 1 package of the steak (I’ve found this at Shop-Rite and Trader Joe’s)
  • 1 onion chopped
  • 2 peppers (I usually get 2 different color peppers just to give it more color)
  • olive oil
  • cheese (American, mozzarella whatever you like) optional
  • Italian Bread (optional)

Heat a little olive oil in a pan and when heated through add your chopped onion and peppers and cook.  When almost cooked, add your shredded steak and cook until no longer pink.  YOU ARE DONE cooking at this point!  Now what you decide to do here is entirely up to you.  You can make a sandwich or just plate it.

I usually skip the bread and just plate it.  I add some shredded cheddar to the top and enjoy!

If you like put it on some Italian bread and top with your favorite cheese! Delish!  You can also be creative and add anything else you like….

A Spaghetti Squash “How to”!

The intimidating, obscure yet delectable spaghetti squash.  It’s hard outer layer has long kept most away from enjoying the surprise that lies inside.  I think today’s recipe will help a lot of you come to LOVE this veggie as much as I do because to my surprise most people do not know this “trick” on how to prepare it.  and so today I am sharing that with you.

The traditional way of preparing this is to roast it in the oven which is time consuming and then even so is still extremely hard to cut and most people fear they will end up cutting their hands and fingers off while wrestling with this veggie.

My way is to microwave it which, once tried, will be your way of preparing it too I am sure.  Take your squash and with either a fork or a knife stab it to make little holes or slits throughout all sides of it.  Then place it on a microwave safe plate and cook it for 15 minutes in your microwave. That’s it!!! When done the skin will be soft and you will be able to cut it open with great ease!!!!  But be careful…it will be extremely hot so let it cool for a while or use gloves to cut it open.  I usually cut the ends off first then cut it down the middle.  Use a spoon to remove all the seeds and then with a FORK rake back and forth to remove its flesh in strands….this will give it that spaghetti look! Hence the name!

Once that is done the possibilities are ENDLESS!  You can have it as a side or a substitute for pasta.  You can prepare it with tomato sauce, garlic and oil or even with ground meat.  Whatever you like….one of my favs is to season it with black pepper and add grated cheese….a mock “cacio e pepe” recipe.

This past week a friend of mine prepared it with cherry tomatoes and spinach which when I saw her post it on Facebook drove me to do the same the very next day. LOL  So, I sautéed some garlic and oil then threw in halved cherry tomatoes, spinach and then the squash.  Mix it all together and then enjoy!  I added some grated cheese too.  It was a nice, healthy dish!  This is low cal and great for the diet so enjoy it whenever you can.

Easy Sunday Morning Coffee Cake!

Sunday mornings are great for being lazy.  You wake up and just want to relax with a nice cup of coffee and some breakfast.  I love the smell of something baking on a Sunday morning and coffee cake is perfect for that.  The sweet alluring smell of cinnamon wafting through the house will wake everyone with a smile.

  • 1 egg
  • 2 teaspoons of baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 cup of milk
  • 1/2 cup of sugar
  • 4 tablespoons of butter softened
  • 2 cups of flour
  • 2 teaspoons of vanilla extract
  • 1/2 teaspoon of salt

Preheat oven to 350 degrees.  For the Streusel topping, in a small bowl, combine 1/4 cup flour, 2/3 cup of sugar and cinnamon.  Stir in butter until mixture looks like coarse crumbs and set aside.

In a large bowl, mix the flour, sugar, baking powder, egg, milk, vanilla and salt and pour into greased 8×8 inch pan.  Then sprinkle top with streusel topping and bake for about 30 minutes.  Insert a toothpick into center of cake if comes out clean your cake is done!  Allow to cool and enjoy!

Tuna Pasta Salad!

Hi Housewives!

The summer season is finally here and with that brings numerous BBQ’s and parties.  Sometimes, you want to bring something thats different than the norm.  most people bring wine or cakes.  How about a new twist on a pasta salad?  Ever since I was a little girl one of my favorite things to eat in the world was tuna fish, not the fancy types you find in restaurants, although that is good too.  But I’m talking a good old-fashioned tuna sandwich.  My childhood friend Gina and I both loved them and ate them all the time with a slice or two of yummy American cheese on top and a side dish of Doritos!  It’s still one of my all time favs.  So, this dish was inspired for my love of tuna.  I’ve been making this for years and if you like tuna you will love this.

  • 1 box of pasta (I prefer farfalle but anything works)
  • Mayo (I prefer good old fashioned Hellmann’s)
  • 1 chopped onion (red)
  • 2-3 cans of tuna (I prefer Bumblebee in water)
  • Dill (dried)
  • Salt and pepper to taste
  • Shredded Cheddar Cheese (optional)
  • Cherry Tomatoes (optional)

Boil your water for the pasta and cook pasta accordingly.  When pasta is done run it under some cool water as your draining it.  When drained place add about half of it at a tine in a large bowl.  Drain your tuna and chop it up with your fork as if you were making a tuna sandwich then add it to the pasta bowl.  You can add about a 1/2 cup of mayo at this time and mix.  I usually just keep adding the mayo as needed, it really depends how you like it.  So add a little and you can always add more as you go.  Throw in your chopped onion, I like red onion for color but you can use what you like or have on hand, and combine, then salt and pepper and dill, lots of it…..its the ingredient that separates it from the rest. Add the shredded cheddar. Mix everything together and then TASTE it!  Top with some sliced cherry tomatoes.  If you need more of anything just add it, it’s your dish!  Refrigerate it or enjoy it immediately.  If bringing it to a party put it in a nice bowl and give the bowl to your hostess as it hostess gift.  That’s always a nice thing to do and they have cute inexpensive bowls at Target or Party City.

BBQ Pulled Pork Recipe!

Happy Memorial Day Weekend everyone!  Whether your off on a vacation, having or going to a Holiday BBQ or just home relaxing this weekend, let’s all take a moment to THANK all the men and women who have served our country in the armed forces and given up their lives for our safety.  I thank each and every one of you!

Are you having a Memorial Day BBQ?  Then, this recipe is great and easy to make without having to slave over the hot oven or BBQ!  It’s also a great dish to bring to a party.  It really doesn’t get any easier than this.  You just put everything in your Crock Pot and go on with your day.  Who doesn’t love that?  My BFF Cathy shared this recipe with me years ago and it’s a great recipe for when you just don’t have the time to slave over the oven.  It’s  perfect for when entertaining and need the oven space for other things you are making.  I made this last week for a party I was throwing at our house and it was a hit!  I just put everything in the crockpot around 11am and let it cook for 8 hours.  Then, kept it on warm until it was time to eat.  I was making lasagna, my artichoke sausage pie and some other things so I needed the oven space for those things.  It was a great feeling knowing that I literally didn’t have to do anything else to this dish.

  • 1 pork tenderloin
  • 1 bottle of BBQ sauce
  • water
  • brown sugar
  • potato slider rolls

Place your roast in your slow cooker.  Pour the whole bottle of BBQ sauce over it.  I then fill that bottle halfway with water and shake it up to get every last bit of the BBQ sauce in my crockpot and pour over my pork.  I top it with some brown sugar about 1 handful.  Cook on low for 8-10 hours.  When done I shred it with a fork and place it on a hamburger bun, I prefer potato rolls.  If you want more BBQ sauce then add more at the end.  Mine didn’t need extra BBQ sauce but thats personal preference.

Spinach and Tomato Frittata

Today’s easy recipe is for a Frittata.  Frittata’s are great for any occasion as well as any meal.  I  made this one for myself for dinner this week when my husband had to work late and I didn’t feel like ordering in and wanted something healthy and simple.

Best part about this is you can add anything you want in it.  Feel free to add asparagus, bacon, ham or whatever you love in a frittata.

  • 6 eggs
  • 1 cup of grape tomatoes cut in half
  • 1 cup of spinach
  • 2 handfuls of shredded cheddar cheese
  • salt and pepper to taste

In a baking dish, place your spinach and tomatoes and 1 handful of cheese.  Then, without mixing crack your eggs and place them around the baking dish, this was the yolks stay in tact.  You can mix the eggs but I like them this way.  Top with more shredded cheddar and salt and pepper.  Bake at 350 until golden brown on top.

Farfalle with Artichokes and Bacon!

If you haven’t noticed already, I LOVE artichokes!  I try to incorporate them in different dishes and as simple sides when I can.  So, this weeks recipe is a delicious pasta dish that is ready in about 30-40 minutes and very flavorful!  It is Farfalle pasta with Artichokes and Bacon!  I use turkey bacon but you can use regular if you wish.  I have never made it with regular so if you choose to do so let me know how it comes.  I also use canned arti’s but frozen will work too.

  • 1 pound farfalle pasta
  • 2 cans of artichokes, drained (You can use frozen if you prefer)
  • 1/2 package of turkey bacon
  • 4 tablespoons extra-virgin olive oil
  • 8 garlic cloves, crushed
  • few shakes of red pepper flakes
  • Grated Cheese for topping, I prefer Pecorino Romano

Bring a large pot of salted water to a boil.  Once boiling, add your pasta and cook until al dente, usually about 11 minutes.

Meanwhile, heat about 1 tablespoon of olive oil in a large skillet.  Chop the bacon into pieces and add to heated olive oil.  Add the garlic and cook both for about 5 minutes.  While that is cooking drain and chop your artichokes.  If you buy them quartered then you don’t need to chop them but if whole then chop them in half and quarter them.  Add them to the skillet and stir everything together.  Season with some red pepper flakes, how much really depends on how spicy you like your meals, I go easy on it because you can always add more later if you wish.  I do not add additional salt as the bacon is salty enough and if you add grated cheese that adds more saltiness to the dish.   Cover and let the artichokes gently cook for about 10 more minutes.  When artichokes are carmelized, uncover and add about 1 cup of pasta water to skillet and bring to a simmer and cook uncovered for another 10 more minutes.

When your pasta is done save some more pasta water if needed and leave on the side.  I usually use that pasta water with any leftover pasta that I want to add to have for leftovers.   Drain your pasta and add about half of the pasta to the skillet slowly stirring often.  Drizzle with 2-3 tablespoons of olive oil and toss together to coat the pasta with the sauce.  Serve.  Sprinkle with some grated cheese and enjoy!

If you made a pound of pasta do not add it all to the sauce at once.  I usually add about half of it and then use the remaining pasta for leftovers.  You can also just make a 1/2 box of pasta.  There are so many ways to add your own personal touch to this dish such as different pasta, fresh artichokes etc…let me know how you like it and how you make it your own….

Turkey and Black Beans!

This is your bonus recipe because I skipped last week!  Rosie, one of my BFF’s, gave me this tasty and healthy recipe to try out.  I was skeptical about it at first but after my first taste both my husband and I absolutely loved it!  It was quite flavorful yet healthy.

Turkey meat are one of those things where besides burgers, tacos or meatloaf what else do you do?  This is something different and I think you will love it too!

  • 1 package of ground turkey meat
  • 1/2 large onion chopped
  • Extra-virgin olive oil
  • 1 can of black beans rinsed over
  • Siracha
  • shredded cheddar cheese
  • shredded lettuce
  • halved cherry tomatoes

Heat olive oil in a skillet.  When heated add your chopped onion and brown.  Add your turkey meat and cook through.  When meat is cooked add the black beans and cook for 5 minutes.

Add to a plate and season with your siracha, how much you add is entirely up to your taste.  Top with tomatoes and cheese and lettuce.
