Spinach and Tomato Frittata

Hi Housewives!

Today’s easy recipe is for a Frittata.  Frittata’s are great for any occasion as well as any meal.  I  made this one for myself for dinner this week when my husband had to work late and I didn’t feel like ordering in and wanted something healthy and simple.

Best part about this is you can add anything you want in it.  Feel free to add asparagus, bacon, ham or whatever you love in a frittata.

  • 6 eggs
  • 1 cup of grape tomatoes cut in half
  • 1 cup of spinach
  • 2 handfuls of shredded cheddar cheese
  • salt and pepper to taste

In a baking dish, place your spinach and tomatoes and 1 handful of cheese.  Then, without mixing crack your eggs and place them around the baking dish, this was the yolks stay in tact.  You can mix the eggs but I like them this way.  Top with more shredded cheddar and salt and pepper.  Bake at 350 until golden brown on top.
